PANCAKES

RICE PANCAKES
---------------

1 1/4 c. rice
2 1/2 c. water
4 c. milk
3 to 4 eggs
1/2 tsp. salt
1 1/4 c. flour
1 to 2 tsp. butter, melted

Boil rice 18 minutes slowly, covered. Add milk and simmer for 15 minutes more. Leave to cool. Beat eggs, add flour and salt. Melt butter. Add to flour mixture. Mix together with rice mixture.Bake small pancakes(like we do for dosa).
